Brings an entirely new significance (and flavour) to BBQ. This can smoke your food without it being necessary for you to touch the charcoal when you learn to do it correctly!
You fundamentally cant as a big water bath involving the food as well as the coals burn the food.
The meat comes out flavoursome and succulent (as you wont realise you want, though you will oversmoke the initial effort). Simply set it up ahead of when you once you have got the temp steady, simply go and need the food prepared and do something different. Perhaps check it every 30-60 minutes to ensure all is well (it'll be).
